adventures in cooking

It's no secret: I am no chef. I am no cook. I can't cook.

I figure that has to change at some point in my life right? I have a good sized family and it just isn't practical to eat mac and cheese or go out to eat every night. Right?

Taking my cue from Lori, I thought could branch out and try one new recipe a week. This is what our menu looked like this week:

Monday: Bacon Stuffed Chicken with Cauliflower

Tuesday: Lasagna Rolls

Wednesday: Grandma's house for dinner (it saved my sanity-or what was left of it)

Thursday: Sour Cream Enchiladas

Tonight we're having tacos and spanish rice. Nice and easy.

The chicken recipe was my new adventure. It was relatively easy and turned out pretty tasty. All three kids asked for seconds of the cauliflower, but really anything tastes good roasted in chicken and bacon fat right?

That went so well (also after having a day of Wed.) I tried another new recipe last night. It smelled good...

looked pretty good...

but tasted terrible. I pulled one enchilada out and began cutting it up for the kids plates. I always sneak a taste as I prepare and last night was no different. It was gross. The tortillas were slimy.

Slimy.

The kids had mac and cheese for dinner. I had leftover lasagna.

Note to self: make sure you have some leftovers or plan B on new recipe nights.

P.S. I was too tired to scrap last night. All is not lost- this is my game I'm playing here. I've decided I can do two layouts in one day and still make the grade. I have new pictures from Costco so I should have some fun tonight.

I will post two layouts tonight.
